Serving suggestions: serve on a large platter and let everyone help themselves to more
Ingredients:
6 corn tortillas
1 c chopped red cabbage
12 oz cod, cut into small pieces
1 tbsp lime juice
Fresh mango salsa
Guacamole
1 tbsp honey
1 tbsp olive oil
1/2 tsp chili power
1/4 tsp garlic powder
Pinch red pepper flakes
1 tbsp canola oil
Salt & pepper
Method:
Combine red cabbage in lime juice and a pinch of salt. Set aside.
Mix honey, olive oil, chili powder, garlic powder, and red pepper flakes with a pinch of salt and pepper. Toss with cod for 20 minutes.
Heat Canola oil in a skillet. When oil begins to smoke, add fish filets, cooking 3-4 minutes on first side. Remove fish from pan.
Assemble tacos by spooning guacamole onto corn tortillas, adding cabbage slaw and cod. Top with mango salsa.
