Chia Seed Parfaits

Serving suggestion: use seasonal berries, nuts, granola, and other healthy mix-ins

Ingredients (4 servings):
1 c vanilla almond milk
1 c plain low-fat Greek yogurt
1 tbsp maple syrup
1 tsp vanilla extract
1/4 c chia seeds
Salt
Banana
Handful cacao nibs
Toasted pecans
Sprinkle cinnamon

Method:
Whisk the almond milk, yogurt, maple syrup, vanilla, and a pinch of salt until just blended. Add in the chia seeds; let stand 30 minutes. Stir to distribute the seeds as they settle.
Cover and refrigerate 8 hours.
Assemble parfaits by using vanilla chia seed pudding as base, then adding sliced bananas (or berries), your favorite healthy nut or seed, and a handful of superfood cacao nibs.
Sprinkle with cinnamon.
